Harlem World receives the member newsletter and thought you would like member Karen Phillips hot Curried Cauliflower & Sweet Potato Soup recipe below to warm your soul this weekend.
Curried Cauliflower & Sweet Potato Soup Recipe
1 large cauliflower, chopped
2-3 sweet potatoes (white or orange), chopped
1 onion or 2 shallots, 1-2 cloves garlic, chopped
Assorted spices to taste (garam masala, cumin, tumeric, other curry powders)
1 tsp. grated ginger (or more!)
4 cups veggie or chicken stock
2 cups (1 can) coconut milk or 1 cup buttermilk
Salt and pepper
Fresh herbs (cilantro, chives, parsley)
Plain yogurt
Sautee onions/shallots/garlic in 1-2 T. oil until translucent. Add spices and ginger, and sautee spices 2 min. Add chopped potatoes and coat in spices. Add stock and simmer for 10 minutes. Add cauliflower and simmer another 10-15 minutes. In batches, blend or food process soup with coconut milk or buttermilk, salt and pepper to taste. Top with garnish of salt, pepper, fresh herbs and yogurt. Note from Karen: I ate mine with homemade cornbread croutons. Yum!
