Happy New Year and welcome to 2010.  Now that we’ve indulged our selves through last year’s holiday season, I hope you are ready to getting back on track to eating healthy.  Instead of focusing on what foods you can’t eat, stay positive and try focusing on the foods that you can eat.  Aim to keep an open mind about food, especially trying new food and food you didn’t like when you were younger.  I didn’t like spicy food as a child, but my taste buds can handle and love them now.

I’ve come to believe that there are no such things as bad foods.  What makes food bad is how often you eat it, and how much you eat when you eat it based upon how much exercise you get.  The secret weapon to healthy living and weight loss is the right combination one two punch.  Just like we must eat to live well, we must exercise to live well too. December is a festive time of year with Christmas, Kwanza, and New Year’s Eve.  A great deal of cooking and baking cakes take place in my family’s kitchens this month.  My late sister Helena and I were born in December, and Grandma Jackson always made our favorite “from scratch” cakes.  Lena wanted chocolate frosting, and I had to have coconut frosting with pineapple filling.  Making Red Velvet Cake and German Chocolate Cake are holiday traditions in many Southern families, and these two recipes follow at the end of the article.  And who didn’t bake cookies to leave out for “Santa Claus” on Christmas Eve?  I kept baking the cookies even when I discovered that my Dad was our Santa Claus.  Please make the time to do so with your kids, grandkids, nieces and nephews to keep our legacies going. Thanksgiving is coming and my memories of Thanksgivings past are as vivid as yesterday.  My family cooked together, and we ate and gave thanks together as a family for our many blessings.  It’s the one time of year when I throw caution to the win and fix my late Mother and late Grandmother’s best recipes just as they did.  We make our turkey dressing and pie crusts from scratch.  It took me a long time to perfect their thin crust and gravy from scratch, but I finally have them down pat.  This is the perfect time to pull our young folks into the kitchen for cooking lessons to pass on family traditions.  Please make the time to do so with your kids, grandkids, nieces and nephews.  Let’s keep our legacies going. jogurt_parfaitSeptember is back to school time.  You should be very concerned about our pre school kids to college students’ eating and exercise habits, just as much as they should be concerned about the same for the adults in their lives.

Two thirds of Americans are overweight.  A May 2007 report released by the NYC Department of Health and Mental Hygiene titled “Obesity in East and Central Harlem” states that:

Dining with Miss Lil: Grilling and Chilling

vegetablesThis is that time of year that you should be outdoors as much as possible, grilling and chilling.  Be adventurous when you grill.  Try new seasonings, recipes, and ingredients such as using fresh herbs, vegetables and fruits you have yet to try.  Fresh herbs can add lots of flavor without any calories.

Marinate your meats for no more than 2 hours in the refrigerator to make sure the acids do not begin the cooking process or you will wound up with tough meats.  If you want to marinate overnight just exclude the salts, vinegar and citrus acids until 2 hours before you begin cooking.  I’ve included a link to a “Build Your Own Shish Kabobs” recipe below.
